jack’s Burger + cheese + bacon + caramelized onion = <3
Step 1. Prepare the eggplant bacon by mixing all the ingredients for it into a small bowl. Slice the eggplant and smear the slices with the prepared ‘smoky’ mixture. Put it into a grill or bake in the oven at about 130 celsius for 20 - 30 minutes till it’s crispy.
Step 2. While waiting for the ‘bacon’, prepare caramelized onion by slicing it into even pieces. Put it into a smaller frying pan with warm oil and sauté it until golden brown. When the onion is soft and golden brown add sugar to the pan and wait for it to caramelize (we used coconut sugar). When the sugar is caramelized and well-mixed with the onion, put it on the side away from the stove.
Step 3. Unpack Jack’s Burgers and lay them into an oiled frying pan (or grill). Fry them for approximately 3 minutes until golden brown from each side. When ready, place a slice of plant-based cheese on the burger and leave it on it until soft.
Step 4. Lay buns, cut side down, on grill and cook until lightly toasted, 30 seconds to 1 minute.
Step 5. Spread plant-based mayonnaise (or sauce of your preference) on bun bottoms. Add tomato, Jack’s burger with cheese, eggplant bacon, caramelized onion and lettuce. Set bun tops in place and enjoy!
